The classic response is, "it depends"

I've seen a Le Mans Aston Martin with .040 6061, but most go with 3003, .050 to .063".

What "panel" are you contemplating?

Half hardened would be the one to use I think that in the US it's the 3000 series ? In Australia it's 5005 H34

3003 H14 (Half hard), .063 is the most common imo. I've seen folks do race cars and airplanes in really thin, difficult to work alloys. I've done some 5052 but it's much more difficult to shape than 3003. 3003 can be shaped a great deal without annealing as long as you wheel/planish it to relieve stresses when it gets tight. Monique, for instance, is 3003 H14 and , other than her face, was never annealed.

As Peter mentioned, the alloy numbering system changes outside the US...sometimes.

There are two easy options available for me and Anton here in Iceland

It is either
EN AW 5754 (57S) - Which we can get in our home town
or
57S 5052-H-12 - Which we would need to have shipped to us from out of town

Which type would you recommend us to use to make the Jeepster doors ?

H12 is quarter hard.
Might be hard enough for the job....
H24 is half hard, and H28 is full.
